Coconut flour cheese Biscuits

Our friend Jennifer shared this recipe with us recently – they were good! I have yet to try her changes (listed below the original recipe), but I imagine it will help a bunch with the texture. Coconut flour baked goods tend to be dry and dense without tweaking the recipe just right. (Is it just me, or do they look deceivingly similar to coconut macaroons?)


4 eggs
1⁄4 cup butter, melted
1⁄4 teaspoon salt
a couple grinds of pepper
1/3 cup sifted coconut flour
1⁄2 teaspoon baking powder
3⁄4 cup sharp cheddar cheese, shredded

Blend together eggs, butter, salt, pepper.

Combine coconut flour with baking powder and whisk into batter until there are no lumps.

Stir in cheese.

Drop batter by the spoonful onto greased cookie sheet. Bake at 400 degrees for 15 minutes. Makes 8 biscuits.

Her Changes:
Ghee instead of butter
Used goat cheddar
Added 1/8 tsp garlic powder to the flour mixture
Added 1/8 tsp guar gum b/c coconut flour can be dry
Brushed biscuits halfway through with ghee and garlic powder

***One more change. After the biscuits cooled, they were a little too dry. I remedied that in a separate batch of coconut muffins by adding a little potato starch (like maybe a tablespoon) and it worked wonderfully.
